This cake is absolutely amazing! It is cheap, quick, very easy and something that everyone loves! It's also my flatmate Danae’s personal favourite and we always have fun in the kitchen when we bake it together. After we slice it, we enjoy it along with a cup of tea! So here I have the recipe and I hope you love it as much as we do!
Ingredients:
- 1/2 cup sunflower oil (100 ml)
- 1 cup caster sugar (225 gr)
- zest of 1 lemon
- 2 eggs
- 1/4 freshly squeezed lemon juice (50 ml)
- 1/2 cup whole milk (100 ml)
- 2 cups plain flour (230 gr)
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 cup blueberries
- dried flower petals (optional)
Glaze:
- 2/3 cup icing sugar
- 1-2 tbsp lemon juice
Instructions:
- In a large bowl, using an electric mixer, mix the sunflower oil and caster sugar together. Beat in the eggs, one at a time, then add the lemon zest.
- In a separate bowl, sift the plain flour, baking powder and salt.
- In another bowl, combine the lemon juice, milk and vanilla. Slowly add the plain flour mixture and wet ingredients, simultaneously, into the egg mixture and combine well. Add the blueberries and mix with a silicone spatula.
- Pour the batter in to a buttered and floured loaf tin. Bake in a preheated oven at 180C degree for 45 minutes to 1 hour, or when a toothpick inserted into the centre comes out clean. Remove from the oven. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely before you decorate it.
for the glaze:
- In a small bowl mix icing sugar and slowly add the lemon juice.
- Glaze the cake and decorate with some dried lavender or other dried flowers.
